Ingredients
For the Zucchini
- 4 medium zucchini (about 2 lb / 900 g) — sliced lengthwise into thin strips, approximately ⅛-inch thick.
- 1 tsp salt — for drawing out excess moisture.
- 1 tbsp olive oil
For the Protein-Rich Cheese Filling
- 1 cup (225 g) part-skim ricotta cheese
- ¾ cup (170 g) plain nonfat Greek yogurt
- 1 large egg
- 2 cloves garlic, finely minced
- ¼ cup (15 g) fresh parsley, chopped
- 2 tbsp fresh basil, chopped — or 2 tsp dried basil.
- 1 tsp Italian seasoning
- ½ tsp black pepper
- ¼ tsp salt
For Layering and Topping
- 1 cup (100 g) shredded part-skim mozzarella
- ½ cup (50 g) finely grated Parmesan cheese
- ¼ tsp red pepper flakes — optional.
